I thought I'd just post some links to two YouTube videos about recording guitar

The first is my go to guy Chris Selim about adding space and ambience to a mono guitar track. As usual he gives some ideas to consider.

The second one is more techie in a way from Warren Huart. It also describes Nashville Tuning in some detail.

I recorded an acoustic guitar track today and I tried out the tips in that first vid as that method is quite similar to what I do already do with a single mic capture. It sounded pretty good.....but I have taken it a bit further with my own method. It's a great way, though for folks to spread out a single mic recording.

I'll take a look at the other vid as well.
